Hello all. I recently had my blood work done and my A1C is high. 6.9 if I remember correctly. My doctor does not feel the need for medical and stated I can control this with diet. As a celiac and type 1 diabetic, several suggestions:

  1. Make sure you get tested for type 1 antibodies.
  2. Its not like you can say "Oh, choose this lower carb choice" so basically you are at the point of substituting. Things like cauliflower crust for pizza. Use lettuce wraps for sandwiches instead of bread.
  3. It all sucks.

He shared it was type 1. I can imagine a lifestyle change like this is going to be tough. But it's that or die. At least that's how I'm looking at it.

Maybe see an endocrinologist for a second opinion. Your A1C is very low but I don't see why you can't be on meds to help while you figure out the diet and exercise part.

Gluten free foods that are starch and carbs are primarily the bread and pasta substitutes aren't they? There are some options that are gluten free that you may want to look into.

There are gluten free and low carb options with noodles made from Konjac, heart of palm or even egg whites but their textures take some getting use to. They even make "rice" . Then you have zoodles ( made of zucchini )

Then there are egg white tortillas ( egg life ) that I'm not sure are gluten free but maybe worth checking out. Coconut wraps ( nuco brand) that advertise that they are low carb and gluten free. I really like these , much

Well said! Look for shops that specialize in this matter. You will be surprised at how much you will find. Check keynutrients they are in Canada but there must be something similar in your country.

Please be encouraged! If you think 6.9 is high, i was diagnosed with an A1c of 15.7..i had lost around 30lbs and my wife MADE me go get checked out..probably saved my life..im on 25 units of insulin once daily and metformin once daily..i seem to be in range most of the time. I already wasnt big on carbs, but all i can say is it is a process..you have to be diligent, but there are foods out there that you can use to substitute that wont send your blood sugar through the roof..i actually commend your doctor for NOT automatically putting you on meds bc if your A1c is that low, im sure your doc wants to see if you can get below 5.8 or whatever by making healthy lifestyle and food changes FIRST..the good thing is, you arent that far away from your goal numbers..try consuming fermented items lik

I would think being gluten free would make this easier not harder.

You want lots of meat, veggie, dairy, fiber. Some fruit. Very little simple carbs so you don’t want to eat bread or rice or potatoes.

Lots of gluten subs are better for the diabetic diet. I have lots of cauliflower subs. Use almond flour instead of wheat flour.

I’ll bread everything in almond flour.

I find that corn and rice based food raises my blood sugar a ton. Peppers, cabbage, cucumbers, egg wraps don’t!
